Biography

After receiving a degree in linguistics and history from Wilkes University in Pennsylvania, Joncarl Lachman began working in restaurants that fed his travel addiction. He got hooked on cooking while working for Nora Pouillon in Washington, DC and decided to enroll at ICE. Looking back at his time at ICE, he says, “I knew right away I had chosen the right culinary school. I loved the small class size and the personal attention.” While in school, he worked for famed chef Anne Rosenzweig and won the San Pellegrino Almost Famous Chef Contest. After a short stint in Ohio, Lachman became the executive chef for Urban Epicure in Chicago. He then ran the stoves at HB, the restaurant owned by the Hearty Boys, the first winners of the Next Food Network Star. He purchased the restaurant from them in January 2007 and turned it into HB Home Bistro. In September 2010, he opened Vincent, a bistro with a strong Dutch accent. His latest move has been to open Noord, a Northern European restaurant in his hometown of Philadelphia. He says, “I am very proud of what I have accomplished in my career. ICE made that all possible. They gave me the confidence that I needed to be able to be competitive in such an incredible business.”
