VIDEO: ICE Mixology Center

When we think about the skills required to open a restaurant, our minds automatically think of culinary technique and business know-how. Yet what about that all-important profit driver: alcohol? In ICE’s Mixology Center, students bridge the gap between beverage management theory and practice behind our state-of-the-art educational bar.

“It used to be that when you opened a bar, you just served the standard drinks: Manhattans, old fashioneds, martinis, etc. There wasn’t a need for drink recipe development. Over the past decade, that has totally changed: today’s bars and restaurants are expected to offer a custom drink menu that complements the business’ overarching concept.” — Anthony Caporale, ICE Director of Beverage Studies

Our dedicated Mixology Center acknowledges this growing demand for craft cocktails in the hospitality market. From workshops with leading liquor companies to master classes with the industry’s top mixologists, ICE students will gain a greater appreciation of the interplay of ingredients, technique and economics that make for an outstanding—and profitable—bar program.
